Black cod (Sablefish) live in deep, cold water. They prefer the muddy ocean floors of the pacific continental shelf, feeding primarily on other smaller fish. They tend to live long lives, with the oldest recorded at 94 years. Most commercially caught black cod are around 20 years old.

Their size varies, but Alaskan black cod can grow as big as 55 pounds and up to 45 inches long. Because of such extreme depths, black cod were once only available to the commercial fishery by means of long lining and pots. With the use of electric reels, we have now made it possible to catch black cod while sport fishing in Sitka, Alaska!

You have to try this fish! It has a natural buttery flavor because of its high omega-3 fatty acid content. This has led to its apt nickname of the "butterfish". The flesh is white, flaky, delicate, and best when caught fresh, similar to Chilean sea bass.
